WFT?! - Berry Mocktail

Hello Fellow Nom Seekers!

Today's What's For Tea?! is not really a meal item but more of a refreshing but healthy drink.  I'm all for devious ways of getting more fruit into our diets and this Berry Mocktail of mine does just that.  Unlike fruit juices which lack the fibre, this Mocktail is a fruit puree so all the fibre goodness is intact. Alternatively you can swig some vodka into it for a pleasurable adulterated version.  Each to your own.

  • a cup of frozen mixed berries (blueberries, blackberries, strawberries)
  • 1/2 cup of cold water
  • 1 peach - stone removed
  • sprig or two of mint
  • 1 tablespoon of Elderflower cordial

  • Put all ingredients into a blender and mix into a slurry.  I use a stick blender but the traditional blender works fine
  • Kick back and enjoy

  • If peaches aren't in season, I use kiwi fruit or passionfruit.
